Sprouted Green Gram Kootu
A Classic recipe which is prepared through out Tamilnadu during summers. Tastes excellent when served with steam cooked rice or roti. Sprouted green gram can be used to make a salad or sundal or a curry.

Ingredients
- 100 gms Green Gram Sprouted
- ½ tbsp Split black gram
- ½ tbsp Mustard seeds
- 1 Pinch Turmeric Powder
- 2 tbsp Gingelly oil Cold press oil
- 1 Stalk Curry Leaves Fresh
- 2 tbsp Coriander leaves Finely Chopped
- 400 ml Water
- 1 tbsp (As Required) Salt Table Salt
For Grinding
- 1 tbsp Cumin Seeds
- 1 tbsp Coriander seeds
- 2 Nos Black Pepper
- 1 No Green Chilli
- 2 Nos Onion Medium Size
- 2 Nos Tomato
- ¼ Cup Coconut Grated
Cook the sprouted green gram in a vessel with 200 ml of water and a pinch of turmeric.
Heat 1 tsp of oil in a pan, Fry the coriander seeds, black pepper, cumin seeds followed by onion, tomatoes and green chilli.
Cool and grind it in a mixture with coconut and set aside.
Add the cooked green gram add the ground paste to a vessel/ pan.
Add sufficient water and salt.
Bring it to boil. Cook for 2-3 minutes.
Heat oil in a pan and temper mustard seeds,black gram and curry leaves, add to the cooked kootu.
Serve hot garnisheed with coriander leaves.
Note:
The gravy can be made more appeasing by adding a tsp of freshly ground, roasted coriander powder.
