Beaten Rice and Raw Vegetable Mix
Poha is nothing but Beaten Rice or Rice Flakes. Poha is known as Aval in Malayalam. Vegetable Poha is such an easy dish which can be made for Breakfast, Brunch or Lunch. It is tasty as well as filling and is not as heavy as rice.

- 1 Cup Beaten Rice Light
- 1 Stalks Curry Leaves Fresh
- 2 tbsp Coriander leaves Chopped
- 1 Nos Green Chilli Finely Chopped
- 1 Nos Onion (Small size) Finely Chopped
- 1 Nos Tomato Finely Chopped
- 100 gms Cucumber Finely Chopped
- 50 gms Carrot Finely Chopped
- 50 gms Capsicum Finely Chopped
- 50 gms Violett Cabbage Finely Chopped
- ½ tbsp Cumin seed powder
- 1 tbsp Lemon juice Fresh
- 1 tbsp (As Required) Salt
- 1 cup (As Required) Water
Clean and wash the beaten rice and strain without water.
Add all the other ingredients.
Mix well and garnish with coriander leaves.
Serve with coconut or mint chutney.
Note:
Beaten rice/ poha / avul as it is called in its vernacular names, is richly packed with iron and carbohydrates. It is easily digest able and hence a good food for the debilitated and for those who have a weak digestive system. It is a complete food when mixed and served with vegetables and sprouts.
