Assorted vegetables like Beetroot,carrot, green peas and tomatoes

Salt and freshly crushed pepper
Instructions
Steam-cook the assorted vegetables, tomatoes, shallots and garlic with just enough water to (one whistle)
Add the roughly chopped spinach leaves to the cooked vegetables , cover and simmer for 5-8 minutes
Blend this mixture in a Blender/Food processor to a smooth puree
Add salt to taste and freshly crushed black pepper
Simmer the puree on a medium flame for 5 minutes
Now add the cooked beans and red rice and mix well

Note
Serve in a large soup bowls with a dash of lemon juice and finely chopped coriander leaves. Enjoy the soupy low calorie meal.
