Vegetable Avial
Flavourful vegetable gravy made with combination of vegetables can enrich the flavour of the food with which it is taken. Curries are prepared with addition of spices either whole or ground.They can be wet or dry based upon the base that is prepared out of coconut milk, mixture of spices, dhal etc. The curries are usually a rich source of Protein,Vitamins and Minerals. The vegetables must be aptly cooked without being Over-Cooked to get a better consistency and flavour of the recipe.

Ingredients
- 1 Nos Drumstick Chopped
- 50 gms Beans Chopped
- 50 gms Carrot Chopped
- 50 gms Cow peas & Broad Beans
- 50 gms Elephant Yam Chopped
- 50 gms Pumpkin Chopped
- 50 gms Raw Plantain Chopped
- 50 gms Mango Chopped
- 50 gms Potato Chopped
- 2 Nos Green Chillies Chopped
- 1 tbsp Cumin Powder
- ½ Cup Coconut Grated
- 3 Stalks Curry Leaves Fresh
- 2 tbsp Coconut Oil
- 3 tbsp Curd
- 1 tbsp (As Required) Salt Table salt
- 1 Cup (As Required) Water
Instructions
- Cut all the vegetables (into approx 2” pieces)
- Add a little water, salt and cook until almost done, Leave it to cool.
- Combine grated coconut, Cumin seeds and green chillies together and grind to Paste.
- Add the vegetables and on simmer mode & add curd.
- Add 2 teaspoon of coconut oil, and curry leaves.
- Mix and serve with rice and any kind of chutney.
