The Best thing about this Little Millet is that it very closely resembles our regular Rice. You can just cook it as a substitute for rice and eat with some curry. So here is the recipe to cook the Little millet (Samai) with greens.

  • 2 Cups Little Millet
  • 6 Cups Water

For Preparing Greens

  • 1 Bunch Palak Fresh
  • 100 gms Split Green Gram
  • 2 Nos Onion (Medium size) Finely chopped
  • 2 Nos Chilli Slit
  • 3 Pods Garlic
  • 2 tbsp Cumin seeds
  • 2 Nos Tomatoes ( Medium Size)
  • 150 ml Water
  • 1 tbsp (As Required) Salt Table Salt
  • 2 tbsp Coconut oil
  • 1 tbsp Mustard seeds and split black gram
  • 1 Stalk Curry Leaves

Instructions

  • Rinse the millet in plenty of water to remove husks, stones and un-hulled pieces.
  • Soak the millet for two hours insufficient water and drain.
  • Boil 6 cups of water in a steam cooker.
  • Add salt, followed by the millet & Cook for 3 whistles.
  • Step down the cooker from stove and keep it aside.

Flavouring

  • Heat 1 tsp of coconut oil in a pan & Saute cumin seeds, garlic, onion, tomatoes and green chillies for 5-7 minutes until done and keep aside.
  • Add the greens to a vessel along with a bit of water and semi-cook for 3-4 minutes.
  • Allow the cooked ingredients to cool for a while.
  • Grind the greens along with fried onion and tomatoes into a paste.
  • Cook split green gram in a separate vessel with 100 ml of water.
  • Add the ground green paste of the hot rice in the steam cooker along with cooked split green gram.
  • Heat 1 tsp of coconut oil and season with mustard seeds, black gram, curry leaves and add to the above mixture and Serve hot.

Notes

This Millet is very versatile and can be used in pretty much all the recipes that are made with rice. We can make samai (Little millet) upma, Lemon samai, Coconut samai, Curd Samai, Samai Payasam etc.
Those who are new to millets can confidently start by trying this millet.
