Ash Gourd ( White Pumpkin ) Olan
This is a very simple recipe and comes together in no time. Ash gourd is simmered in coconut milk along with the curry leaves and green chillies. The flavors are so delicate and the stew itself is very lite.

Ingredients
- 150 gms Ash gourd (White Pumpkin)
- 1 No Green Chilli
Coconut milk extracted twice
- ½ Cup First milk
- ½ Cup Second milk
- To taste Salt
- 1 tbsp Salt
- 1 tbsp Coconut oil
- 1 Stalk Curry Leaves
Instructions
- Cut the White Pumpkin Into Medium sized Cubes
- Add a little salt and cook with second coconut milk
- Once Cooked, add the first milk , curry leaves, chilli and bring to a gentle simmer
- Add Coconut oil, turn off stove
- Serve Hot with rice and sambar
