A Low Calorie Soup Meal

Equipment
- Chopping board
- Steam cooker
- Knife
- Bowl
Ingredients
- 2 Cups Assorted vegetables like Beetroot,carrot, green peas and tomatoes
- ½ bunch Spinach leaves
- ½ cup Shallots Small onions
- 3 nos Garlic pods
- 2 tbsp Cooked beans (Soy or Rajma)
- 1 tbsp Cooked Red rice
- To Taste Salt and freshly crushed pepper
Instructions
- Steam-cook the assorted vegetables, tomatoes, shallots and garlic with just enough water to (one whistle)
- Add the roughly chopped spinach leaves to the cooked vegetables , cover and simmer for 5-8 minutes
- Blend this mixture in a Blender/Food processor to a smooth puree
- Add salt to taste and freshly crushed black pepper
- Simmer the puree on a medium flame for 5 minutes
- Now add the cooked beans and red rice and mix well

Note
Serve in a large soup bowls with a dash of lemon juice and finely chopped coriander leaves. Enjoy the soupy low calorie meal.
