Ash Gourd Clear White Soup
In Ayurveda and other traditional eastern medicine practices, ash-gourd is known to be used as a general tonic for its restorative properties. It is rich in many vitamins and minerals. It contains 96% water, making it a diabetic friendly and weight-loss friendly vegetable. Ash-gourd is alkaline in nature and hence has a cooling and neutralizing effect on stomach acids, and as such used effectively for treating digestive ailments.

Ingredients
- 150 gms Ash Gourd Chopped
- 50 gms Cabbage Chopped
- 50 gms Tender bottle gourd Chopped
- 1 tbsp Gingelly oil Cold press oil
- 2 Pinches Pepper Powder
- 1 Pinch Asafoetida
- 1 tbsp Coriander Leaves Finely Chopped
- 1 tbsp (As Required) Salt Table salt
- 2 tbsp Lemon juice Fresh
Instructions
- De-Skin the ash gourd and cut into pieces along with other vegetables.
- Add to a steam cooker with 1 cup of water.
- Cook for two whistles on simmer.
- Remove from stove and cool.
- Add a little water and grind in a mixer until mashed well.
- Sieve the ingredients and discard lumps.
- Bring the mixture to a boil, on simmer.
- Add pepper powder and salt.
- Temper cumin seeds, curry leaves, asafoetida and add to the mixture.
- Add lemon juice and serve garnished with coriander leaves.
Notes
Variation:
Vegetables like knol-khol, radish and turnip can also be used to prepare the soup in different flavours as per your taste.
